Salted Caramel Bliss Balls

These bliss balls have a delicious caramelly flavour - thanks to the combination of dates, tahini and vanilla. A nutritious sweet treat that is super easy to make.

Makes: 14 bliss balls
Prep time: 10 minutes

Ingredients

  • 1 cup raw cashew nuts

  • ¼ cup shredded or desiccated coconut, plus 3-4 tablespoons extra to coat

  • Pinch of Himalayan salt

  • 5 pitted medjool dates (or 12 pitted dates soaked for 5 minutes in hot water)

  • 1 tablespoon tahini

  • 1 tablespoon maple syrup

  • ¼ teaspoon vanilla bean extract

Method

Combine cashew nuts, coconut and salt in a food processor and blend for 30 - 60 seconds, until mixture is crumbly.

Add all remaining ingredients to the food processor and blend for a further 1 - 2 minutes, until the mixture is well combined and sticky.

Using a tablespoon as a measure and wet hands, roll the mixture into balls and then roll balls into coconut to coat.

Place in the fridge for an hour or so to set.

Eat mindfully and enjoy!

We recommend using organic ingredients if possible. Keep in an airtight container in the fridge for 1 - 2 weeks, or in the freezer for up to 2 months.
