Chocolate Chickpea Cookies
These cookies are a hit with children too - they are so tasty and easy to make with them. Perfect for a healthy sweet treat or for lunches.

Ingredients
1x 400g can chickpeas (rinsed and drained)
½ cup nut butter (peanut, almond)
1 teaspoon vanilla essence
½ cup coconut sugar
1 teaspoon baking powder
2 tablespoons ground almonds
1 tablespoon melted coconut oil
½ cup dark chocolate, chopped
1 tablespoon hemp seeds (optional)
Method
Preheat the oven to 170 degrees°C and line a baking tray. Pat chickpeas dry with paper towels.
Place chickpeas, nut butter, vanilla, coconut sugar, baking powder, oil and ground almonds in a food processor. Blend until cookie dough consistency forms.
Add dark chocolate and pulse briefly.
Wet hands and roll dough into balls. Place onto the tray about 3cm apart - flatten slightly with a fork.
Bake for about 15-20 minutes or until slightly golden.
Let the cookies cool slightly and then transfer to a wire rack.
Eat mindfully and enjoy!
