Chocolate Chickpea Cookies

These cookies are a hit with children too - they are so tasty and easy to make with them.  Perfect for a healthy sweet treat or for lunches. 

 Makes: 12 

Prep time: 15 minutes 

Cooking time: 15-20 minutes 

Ingredients

1x 400g can chickpeas (rinsed and drained) 

½ cup nut butter (peanut, almond) 

1 teaspoon vanilla essence 

½ cup coconut sugar 

1 teaspoon baking powder 

2 tablespoons ground almonds

1 tablespoon melted coconut oil 

½ cup dark chocolate, chopped

1 tablespoon hemp seeds (optional) 

Method

  1. Preheat the oven to 170 degrees°C and line a baking tray. Pat chickpeas dry with paper towels. 

  2. Place chickpeas, nut butter, vanilla, coconut sugar, baking powder, oil and ground almonds in a food processor. Blend until cookie dough consistency forms. 

  3. Add dark chocolate and pulse briefly. 

  4. Wet hands and roll dough into balls. Place onto the tray about 3cm apart - flatten slightly with a fork. 

  5. Bake for about 15-20 minutes or until slightly golden. 

  6. Let the cookies cool slightly and then transfer to a wire rack. 

  7. Eat mindfully and enjoy! 

We recommend using organic ingredients if possible. Keep in an airtight container for one week, or in the freezer for up to 2 months.
